Almond Crusted Tilapia

Another great Tilapia recipe I came across. Can you tell how much we enjoy this fish? =)

  • 2 tilapia fillets
  • 1/2 eggs (I used 1/8 C egg substitute)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon lemon pepper
  • 1/4 cup ground almonds
  • 1/2 cup grated Parmesan cheese
  • 1.5 tablespoon butter
  • 1/4 cup grated Parmesan cheese
  • Parsley

Heat a skillet on medium. While heating, combine the egg, garlic powder, and lemon pepper in a small bowl or shallow dish. In another dish combine the almonds and cheese. Add the butter to the skillet, and dip the fillets in the wet dish first, then the dry one. Make sure to cover the fillets. Place in the skillet and cook each side ~1:30. Add the remaining cheese and cover just until it has slightly melted (a minute tops).  Garnish with Parsley. (Not shown in my picture) Enjoy!
